I’m trying to figure out what to do for protein snacks that are low in carbohydrates and healthy?

Hi Corbin, great question! Some of my own personal favorite high protein/low carb snacks are: 1) 2 hard-boiled eggs (with egg yolk removed) + 1 small handful of pumpkin seeds (with shell) 2) 2 tbsp PB (look for brands without hydrogenated oils) + 1 cup of baby carrots 3) 5 slices of turkey/chicken deli meat (natural is best) wrapped in lettuce with 1 piece of mozzarella cheese stick (divided), you can add a little mustard if you'd like 4) 2 oz beef/turkey jerky 5) 1/2 cup cottage cheese + 1/2 cup berries (blackberries are lowest in carbs) 6) 1 cup plain greek yogurt + 1/2 scoop chocolate protein powder - mix well (taste like a chocolate mouse) 7) 1 mozzarella cheese stick + 1/4 cup raw nuts/seeds 8) 1/2 cup pumpkin seeds (with shell) 9) 1/2 cup dried roasted edamame 10) 2 tbsp PB + cut up celery sticks (as many as you'd like) 11) 1/4 cup hummus + non starchy veggies (broccoli/cauliflower/etc) 12) 1/2 can tuna + 1 tbsp avocado + S/P (mix well) and put on cucumber slices 13) 1 oz soft mozzarella + 1 medium diced tomato (add slices of mozzarella on tomato slices) 14) 1/2 cup cottage cheese with 1 cup of diced cherry tomatoes + S/P Those are some diabetic-friendly low carb/high protein snacks on the top of my head. Great question, hopefully you find these suggestions helpful.
